
In light of my commitment to serve healthier food, and to ingest as many servings of fruits and vegetables a day into our family, I thought I'd share the beautiful salad I made us for dinner last night :) The meal consisted of spinach, carrots, orange peppers, grilled chicken breast (cut on top of the salad), slice granny smith apples (also placed on top of the salad--delicious!), tomatoes, raw broccoli and feta cheese. Sweet Potato french fries and corn on the cobb were the side dishes. I think Chuck was skeptical..."is this all that is for dinner?" to which I responded, "trust me honey, I promise you will be full after you eat all this!" I was right, he was completely satisfied. I grilled one chicken breast for the two of us which was the perfect amount to top our salad, and I swapped our regular lettuce for spinach, which prompted a "uh what's this?" from my husband. "Spinach honey, it's so much healthier." "Spinach comes raw?? This is good! We can substitute this any day! I just thought it came cooked or creamed!" (For the record, I won't eat it cooked or creamed either!) Here's to a summer of veggies and lots of trips to the local produce stand!
I don't know if you've had a chance to read "Animal, Vegetable, Miracle." If you haven't, I think you'd really enjoy it!
